Pan of potatoes, peppers and onion

Early this morning I went in the kitchen and I prepared this pan of potatoes, peppers and onion, so that when I’ll come back home tonight it will be waiting for me a dish of vegetables so delicious and so much light.

Servings: 4


  • 1 lb  12 oz          Bell peppers
  • 1 lb   5  oz          Potatoes
  • 2                        Onions (large)
  • 1   handful         Olives
  • 4        tbsp         Extra virgin olive oil
  •      to taste         Ground black pepper
  •      to taste         Salt


Wash, peel and cut the potatoes into cubes.

Wash, remove seeds and cut bell peppers into pieces.

Peel and coarsely slice the onions.

Put all the vegetables in a bowl, season with extra virgin olive oil, salt, black pepper and mix well.

Transfer the vegetables into a baking sheet, cover with aluminum foil and bake in preheated oven for 30 minutes at 400 ° F. After 30 minutes uncover the pan and continue cooking for another 5 minutes.

Serve the pan of potatoes, peppers and onion garnishing with a light sprinkling of black pepper and a few drops of extra virgin olive oil.

Teglia di patate, peperoni e cipolla

Questa mattina di buon ora mi son dato da fare in cucina e ho preparato questa teglia di patate, peperoni e cipolla, così che stasera al ritorno a casa ci sarà ad aspettarmi un delizioso piatto di vegetali, tanto gustoso, quanto leggero.

Dosi per 4


  • 800     gr          Peperoni
  • 600     gr          Patate
  • 2                      Cipolle (grandi)
  • 1                      Manciata di olive
  • 60       ml         Olio extravergine di oliva
  •            qb         Pepe nero macinato fresco
  •            qb         Sale


Lavare, sbucciare le patate e tagliarle a cubetti.

Lavare, eliminare i semi e tagliare i peperoni a pezzi.

Sbucciare e affettare grossolanamente le cipolle.

Mettere tutte le verdure in una ciotola, condire con olio, sale, pepe e mescolare per bene.

Trasferire le verdure in una teglia da forno, coprire con carta d’alluminio e cuocere in forno preriscaldato per 30 minuti a 200° C. Trascorsi i 30 minuti scoprire la teglia e continuare la cottura per altri 5 minuti.

Servire la teglia di patate, peperoni e cipolla guarnendo con una leggera spolverata di pepe e qualche goccia di olio extravergine di oliva.
