Buffalo mozzarella cannellini salad

The salad that I made today is made with cannellini beans flavored with dried tomatoes and enriched with buffalo mozzarella, a salad very simple but at the same time complete and delicious.

Ingredients to make buffalo mozzarella cannellini salad:

  • 14      oz          Boiled cannellini beans (if using canned beans, drain and rinse them thoroughly)
  • 7        oz          Buffalo mozzarella (diced)
  • 10                    Ripe cherry tomatoes (cut into quarters)
  • 10                    Sun-dried tomatoes in oil (drained and cut into strips)
  • 5        oz          Black olives baked
  •           tt            Arugula
  • 2       tsp          Capers in vinegar
  • 4      tbsp         Extra virgin olive oil
  •           tt            Salt

Istructions:

In a salad bowl gently mix beans, mozzarella, cherry tomatoes, dried tomatoes, olives, arugula, capers, a pinch of salt and extra virgin olive oil.

Leave to rest before serving, to ensure that all the ingredients will be well flavored. Serve the buffalo mozzarella cannellini salad as an appetizer, as a side dish or as a main dish for a fresh and colorful dinner.

Insalata di cannellini e mozzarella di bufala

Con l’arrivo delle giornate più calde aumenta il desiderio di mangiare cibo fresco e leggero preparato con colorati e gustosi vegetali. Ovviamente con tutta la grande, se non infinita, varietà di verdure disponibili, le ricette per comporre le insalate che più amiamo sono praticamente infinite.

L’insalata che ho preparato oggi è a base di fagioli cannellini insaporiti da pomodori secchi e arricchiti da mozzarella di bufala, un’insalata molto semplice ma al tempo stesso ricca e deliziosa.

Ingredienti per preparare l’insalata di cannellini e mozzarella di bufala

  • 400      gr          Fagioli cannellini lessi (se si usano fagioli in scatola, scolarli e risciacquarli accuratamente)
  • 200      gr          Mozzarella di bufala (tagliata a cubetti)
  • 10                     Pomodorini maturi (tagliati in quattro)
  • 10                     Pomodori secchi sottolio (scolati e tagliati a striscioline)
  • 140      gr         Olive nere al forno
  •             qb         Rucola
  • 2                       Cucchiaini di capperi sottaceto
  • 60        ml         Olio extravergine di oliva
  •             qb         Sale

Istruzioni:

In una insalatiera mescolare delicatamente fagioli, mozzarella, pomodorini, pomodori secchi, olive, rucola, capperi un pizzico di sale e l’olio extravergine di oliva.

Lasciare riposare prima di servire, per far si che tutti gli ingredienti si insaporiscano per bene. Servire l’insalata di cannellini e mozzarella di bufala come antipasto, come contorno oppure come piatto unico per una cena fresca e colorata all’insegna della leggerezza e dell’allegria.

    Absolutely divine, Luigi! I can imagine how flavorful this salad is. I am a big fan of Buffalo mozzarella. I have had Buffalo mozzarella at Naples, Italy!Really a taste to remember !I love every bit of your salad!

      Thanks so much my friend Hadia ! 🙂 Oh then we’re two fans of buffalo mozzarella!! I love it so much too .. Here in my area it is very good but not as much as it is in the area of Naples !!
